Just be open-minded when it comes to everything else. So if you have your heart set on those, make your reservation without fear. McPhail promises the bread pudding souffle and the turtle soup will always be there. He makes two exceptions at Commander's, however. If he dines at a restaurant, and sees the same menu when he returns six months later, "I think, 'come on,'" McPhail says. One of his personal measuring sticks for a restaurant is how often it changes up it dishes. McPhail says restaurants shouldn't feel obligated to stick with their specialties, just because diners are used to seeing them on the menu. The regular meetings are a way to make sure that the story behind the menu item is understood and can be communicated by anyone who might play a role in serving it, he says. Servers and other staff taste new dishes and are given a list of their ingredients. Keeping staff informed. McPhail meets with the restaurant's staff twice a day to discuss the lunch and dinner menus. McPhail says he buys what he can get, and makes sure servers tell diners that there is a limited amount. Too, many anglers prefer to fish for allowable speckled trout in summer and fall, meaning they can be harder for restaurants to find in winter and spring. But, it is subject to state limits on the size that can be caught and the number that can be caught daily. Speckled trout is a popular Louisiana specialty served by a number of restaurants. "You should have been here last week," he says. He recalls one upset customer, who came to Commander's expecting to see soft-shell crab on the menu. Even though they are available frozen year around, McPhail declines to use them once the local season ends. Likewise, McPhail offered soft-shell crabs throughout their season, generally from late spring through early fall. "Nobody will be interested in pumpkin after Thanksgiving," he says. McPhail calculates that he'll keep in on the menu through Thanksgiving, when it will be replaced. Right now, the Commander's menu includes a pumpkin salad with pumpkins that have recently become available. Often, the staff already has ways in mind to use the ingredients, but other times, chefs make suggestions upon seeing the haul, he says.
